FRENCH TOAST SANDWICH

What a lovely twist to the usual french toast. Just a few additions and you have got yourself a meal. Ain’t that brilliant?
These kind of recipes are a keeper for those rainy days that you don’t feel like cooking but you feel guilty about ordering out as well.
I saw this recipe on Nadiya Hussain’s cooking show and thought it was absolutely genius! The recipe makes use of only pantry essentials and can be whipped up in a few minutes. Now who doesn’t like recipes like that?!
It does great in snack /lunch boxes too! 

INGREDIENTS:

eggs – 2
white bread – 6 slices
turmeric powder – 1/4 tsp
garlic powder – 1/4 tsp (see notes)
vanilla essence – 1/4 tsp
sugar – 3 tbsp 
milk – 1/4 cup
pinch of salt
oil for frying- few spoons
filling (pick cheese and any 1 ingredient)
cheese singles – 3 
pesto sauce – recipe here (optional)
spinach leaves (optional)
sauteed mushrooms (optional)
jalapenos, chopped (optional)
black olives (optional)
chicken ham (optional)
PROCESS:
  • In a shallow wide bowl, break the eggs.  Add turmeric, vanilla essence, salt and sugar and whisk well.
  • Add in the milk and whisk. This is the egg mixture for dipping the bread. Keep aside.
  • Place one bread on a plate. Smear the pesto sauce. top with 1 slice of cheese on it add some black olives and jalapenos.
  • Take another slice of bread and smear some pesto on it and cover the other bread, sauce side down so that it looks like a sandwich.
  • Gently press it down.
  • Now, carefully dunk /soak it in the egg mixture so that the egg coats all sides of the bread.
  • Heat 1 tbsp of oil on a saucepan, place the sandwich on it. Let it cook on low flame.
  • Since your cooking on low flame it will take awhile but its worth it.
  • Drizzle with oil on the sides of the bread. Cook for a few minutes and then flip. Gently press down with the back of your spatula.
  • Cook both sides evenly and your done when you get a nice and even brown.
  • Repeat for the other 2 sandwiches.
Notes:
  •  If you are using pesto sauce you need not add garlic powder to the egg mixture because pesto already has garlic in it.
  • Always choose cheese with any filling of your choice. CHEESE IS COMPULSORY. I have just given a few suggestions under the ‘filling’ list of ingredients. For this sandwich I have used cheese,pesto, black olives and jalepenos. 
  • Don’t over stuff the sandwich. It might start spilling out.
